Ingredients:
1 whole chicken (2kg), preferably organic
kosher salt
fresh ginger cut into slices
2 stalks of green garlic, cut into sections (both the green and white parts)
1 teaspoon of sesame oil
2 cups of reserved chicken poaching broth
2 cups of long-grain rice, soaked in cool water for 10 minutes
For the chilli sauce
1 tablespoon of lime juice
2 tablespoons of reserved chicken poaching broth
2 teaspoons of sugar
4 tablespoons of sriracha chili sauce
4 cloves of garlic
