Hainanese chicken rice is a well-known dish of Chinese origin, strongly related to Singaporean or Malaysian cuisine. As well as being commonly served in Hainan Province, the dish is also popular in Thailand as well as being the national dish of Singapore.

The poached white chicken slowly cooked and infused with garlic and ginger with a soy-sauce dressing, served with fragrant, oily rice cooked in chicken broth, is incredibly appetizing if made properly. Presented below are a straightforward set of instructions for you to bring this simple yet satisfying dish on to your plate at home.

In this recipe, all of the poaching broth is pre-made --- some is used in the rice, a small amount is used in the chili sauce, and the remainder is saved to be heated and served as a simple soup to accompany the chicken.

Making Hainanese chicken rice

Wash a whole chicken and season it with salt inside and outside. Stuff the chicken with the ginger slices and the green onion. Place the chicken in a large stockpot, bring the pot of water to boil over high heat, then immediately turn the heat down to keep at a simmer. Place the chicken in the water and cook for about an hour or so.
